2024 Solera Dinner

Our Solera Dinner on September 8th was a memorable evening which marked the beginning of TCB’s 7th Anniversary celebrations. The night featured delicious food, great beer, and an exclusive tour of our Foeder Room.

Solera Farmhouse Saison is our flagship foeder beer and the first ever brewed at TCB. Since the release of Batch #001 in 2017, we’ve set aside a portion of each annual brew from Foeder No. 5. We brew the same recipe in that foeder yearly, adding the previously cellared portion into the foeder, allowing the beers to introduce themselves into one another, slowly soaking into the French oak, and creating a Solera effect. Each year, in celebration of our brew anniversary, we bottle the blended beer from Foeder No. 5, knowing a part of the original 2017 brew lives on.

As guests arrived for the evening, they were greeted with samples of specialty beers brewed exclusively for our anniversary: Barley Wine, Bourbon Barrel Baltic Porter, and Brett Pale Ale. Fresh hors-d’oeuvres were prepared and passed as guests enjoyed their welcome beverages and a Solera slideshow—a sneak peek of what they would learn on the tour.

One of the highlights of the evening was our guided tasting session and tour of our Foeder Room led by Scott, our Head of Production. The session gave guests a chance to hear the story of Solera, the process that brought it to life, and how the beer has evolved over the past seven years. With the opportunity to sample previous years of Solera, guests could compare, ask questions, share their thoughts, and explore the craftsmanship behind each pint.

When it came to dinner, we wanted to offer something special, just like the beer we were pouring. Each course was designed to taste amazing and complement the flavours of our anniversary brews. Starting with a fresh salad—crisp greens and vegetables, a bright garlic dill dressing, and a slight crunch from toasted almonds.

The centrepiece of the meal was a perfectly cooked prime rib roast. Served with roasted seasonal carrots and potatoes, it was hearty and satisfying and paired perfectly with the first sips of Solera. The meal ended on a sweet note with a rich New York cheesecake plated with tart berries and a caramel base.

As we look ahead to the next seven years and beyond, we’re excited for what’s to come! New beers, new adventures, and more chances to bring people together over a pint.
